Greek Salad

Serves 1. Per serve: 258 calories, 1079 kJ, 10.5g protein

INGREDIENTS:

  • 1 cucumber
  • 1 tomato
  • 1/4 red onion
  • 30g feta
  • 5 olives
  • 1 tsp olive oil
  • 1/2 tbs red wine vinegar
  • Oregano, to garnish

METHOD:

  1. Chop cucumber and tomato into bite-sized pieces
  2. Slice red onion thinly
  3. Combine vegetables in a bowl
  4. Add feta cubes and olives
  5. Drizzle with olive oil and vinegar
  6. Sprinkle with oregano, salt, and pepper
  7. Toss gently and serve immediately
