Mushroom, Pak Choy and Tofu Stir Fry

Serves 4. Per serve: 220 calories, 920 kJ, 18g protein

INGREDIENTS:

  • 1 tbs olive oil
  • 1 medium bok choy
  • 20g dried sliced shitake mushrooms
  • 300g oyster mushrooms
  • 1 garlic clove
  • 2 tbs soy sauce
  • 450g firm tofu

METHOD:

  1. Heat the oil in a wok or frying pan. Add garlic and tofu and stir-fry for a couple of minutes until tofu is heated through
    2. Add pak choy and stir fry for 1 minute
    3. Add all the mushrooms and stir fry for a further minute
    4. Add the soy sauce and stir through
