INGREDIENTS:
1 tbs olive oil
1 medium bok choy
20g dried sliced shitake mushrooms
300g oyster mushrooms
1 garlic clove
2 tbs soy sauce
450g firm tofu
METHOD:
Heat the oil in a wok or frying pan. Add garlic and tofu and stir-fry for a couple of minutes until tofu is heated through 2. Add pak choy and stir fry for 1 minute 3. Add all the mushrooms and stir fry for a further minute 4. Add the soy sauce and stir through
